Recipe: Chicken wings.

This is loosely based on Mark Bittman’s ‘How to Cook Everything.’

Preheat oven to 375 degrees. I use the wings from a Chinese market (all is included.) Massage the chicken with salt, pepper, and olive oil. Roast for about 30 minutes, skin down. In the meantime, whisk together a splash of  sesame oil, a splash of vinegar, and a splash of soy sauce (I prefer dark.) Turn the wings over and roast for 20 minutes. Get the tray out, raise oven temperature to 450. Smother the sauce over the wings with a brush and roast for 10 minutes. That’s it.
