Recipe: Speaking of Capers and Fish

This is super quick and easy. Usual disclaimers (use your judgement) apply.

Grab a fillet of white fish (I tried this with flounder, cod, and, maybe tilapia.) Dry well with paper towel. Mix a bit of flour with salt, pepper, or whatever you have (judgement!) Dunk the fish in the flour mix and fry in plenty of oil and butter on  medium high. Should take about two minutes for each side. Plate the fish. Throw a bunch of capers (with liquid) into the same fishy, oily, buttery skillet to make the sauce. A bit of lemon juice won’t hurt. Whisk more butter if necessary and dump over fish. That’s it.
